Description

A quick and easy recipe for gluten free cookie dough that’s safe to eat raw. This treat features a buttery, sweet dough loaded with mini chocolate chips and uses heat-treated gluten free flour to ensure safety and deliciousness. Perfect for satisfying cookie cravings without baking cookies.

Ingredients

Dry Ingredients

  • 1 cup gluten free 1 to 1 flour
  • 2 tbsp granulated sugar
  • ½ cup light brown sugar (tightly packed)
  • pinch sea salt
  • ⅓ cup mini chocolate chips

Wet Ingredients

  • ½ cup butter (room temperature)
  • 1 tbsp milk of choice
  • ½ tsp vanilla extract

Instructions

  1. Heat Treat the Flour: Spread the gluten free flour evenly onto a lined baking pan and bake in a preheated oven at 350 degrees Fahrenheit for 5 to 7 minutes to kill any bacteria. Alternatively, microwave the flour in a microwave-safe bowl for 1 minute. Let flour cool completely before using.
  2. Cream Butter and Sugars: In a stand mixer, beat the room temperature butter with the brown sugar and granulated sugar for about 2 minutes until the mixture is smooth and no clumps of butter remain. This process ensures a creamy texture.
  3. Combine Ingredients: Add the heat-treated flour, milk, vanilla extract, and a pinch of sea salt to the butter and sugar mixture. Stir with the mixer or a spatula until all ingredients are fully incorporated and a dough forms.
  4. Fold in Chocolate Chips: Gently fold in the mini chocolate chips using a spatula to evenly distribute them without breaking the chips.
  5. Serve or Refrigerate: Enjoy the cookie dough immediately as a safe-to-eat treat, or refrigerate it in an airtight container until ready to serve. Chilling may improve the texture.

Notes

  • Ensure the gluten free flour is heat treated to make the dough safe for raw consumption.
  • Use room temperature butter for easier mixing and better texture.
  • The milk can be dairy or any plant-based milk to suit dietary preferences.
  • For a firmer dough, refrigerate for at least 30 minutes before serving.
  • Store the dough in an airtight container in the refrigerator for up to 3 days.
  • Feel free to customize by adding nuts or other mix-ins while folding in chocolate chips.
