Ingredients

Donut Batter

  • 10 tbsp butter (room temperature)
  • 1 cup light brown sugar (tightly packed)
  • ½ cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 ¾ cups gluten free 1 to 1 flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • pinch nutmeg
  • ⅔ cup apple cider

Cinnamon Sugar Coating

  • ⅓ cup granulated sugar
  • 1 tsp cinnamon
  • 2 tbsp butter


Instructions

  1. Preheat Oven and Prep Pan: Preheat your oven to 350 degrees Fahrenheit and spray a donut pan with nonstick spray to prevent sticking.
  2. Mix Butter and Sugars: In a stand mixer, beat the room temperature butter, brown sugar, and granulated sugar for about 2 minutes until no clumps remain and the mixture is smooth and creamy.
  3. Add Eggs and Vanilla: Add the eggs and vanilla extract into the butter-sugar mixture and stir until thoroughly combined.
  4. Incorporate Dry Ingredients: Add the gluten free flour blend, baking soda, cinnamon, and nutmeg to the wet ingredients, stirring until a thick dough forms.
  5. Stir in Apple Cider: Slowly add the apple cider into the dough mixture while stirring continuously until the dough maintains a thick consistency.
  6. Pipe Batter into Pan: Transfer the dough into a Ziplock bag, cut off one corner, and pipe the batter into the prepared donut pan cavities, filling each a little more than halfway.
  7. Bake Donuts: Bake the donuts in the preheated oven for 12 to 14 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool Donuts: Remove the donuts from the oven and let them cool in the pan for 5 minutes. Then invert the pan to release the donuts onto a wire rack to finish cooling.
  9. Prepare Cinnamon Sugar: In a shallow bowl, combine granulated sugar and cinnamon, stirring well to mix evenly.
  10. Coat Donuts: Melt the 2 tablespoons of butter. Brush each donut with melted butter on all sides, then immediately dip each one into the cinnamon sugar mixture to coat both sides. Repeat for all donuts.
