Description
Funfetti blondies are chewy, buttery dessert bars bursting with sweet vanilla flavor and colorful rainbow sprinkles. These easy-to-make treats are perfect for birthdays, celebrations, or anytime you want a fun and festive dessert.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup rainbow sprinkles (jimmies)
- 1/3 cup white chocolate chips (optional)
Instructions
Preheat oven to 350°F (175°C). Line an 8×8-inch or 9×9-inch baking pan with parchment paper or grease it well.
- In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
- Add eggs and vanilla extract and mix until well combined.
- Stir in flour, baking powder, and salt until just combined—do not overmix.
- Fold in rainbow sprinkles and white chocolate chips if using.
- Spread the batter evenly into the prepared pan and smooth the top.
- Bake for 25–30 minutes, or until edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
- Let cool completely in the pan before slicing into squares.
Notes
- Use jimmies, not nonpareils, to prevent color bleeding.
- Do not overbake—edges should be set but the center slightly soft for chewy texture.
- Optional almond extract can enhance the birthday cake flavor.
- Sprinkles can be swapped for seasonal colors to match holidays or events.
- White chocolate chips add extra sweetness and a creamy texture.
