Description

Funfetti blondies are chewy, buttery dessert bars bursting with sweet vanilla flavor and colorful rainbow sprinkles. These easy-to-make treats are perfect for birthdays, celebrations, or anytime you want a fun and festive dessert.

Ingredients

  1. 1 cup all-purpose flour
  2. 1/2 cup brown sugar
  3. 1/4 cup granulated sugar
  4. 1/2 cup unsalted butter, melted
  5. 2 large eggs
  6. 2 tsp vanilla extract
  7. 1/2 tsp baking powder
  8. 1/4 tsp salt
  9. 1/3 cup rainbow sprinkles (jimmies)
  10. 1/3 cup white chocolate chips (optional)

Instructions

Preheat oven to 350°F (175°C). Line an 8×8-inch or 9×9-inch baking pan with parchment paper or grease it well.

  1. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
  2. Add eggs and vanilla extract and mix until well combined.
  3. Stir in flour, baking powder, and salt until just combined—do not overmix.
  4. Fold in rainbow sprinkles and white chocolate chips if using.
  5. Spread the batter evenly into the prepared pan and smooth the top.
  6. Bake for 25–30 minutes, or until edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  7. Let cool completely in the pan before slicing into squares.

Notes

  1. Use jimmies, not nonpareils, to prevent color bleeding.
  2. Do not overbake—edges should be set but the center slightly soft for chewy texture.
  3. Optional almond extract can enhance the birthday cake flavor.
  4. Sprinkles can be swapped for seasonal colors to match holidays or events.
  5. White chocolate chips add extra sweetness and a creamy texture.
