Ingredients
- 1 1/2 cups fresh strawberries, hulled and sliced
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- Powdered sugar, for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or line with parchment paper.
- Wash, hull, and slice the strawberries. Set aside.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in vanilla extract.
- Gradually add the dry ingredients, alternating with the milk, beginning and ending with flour. Mix until just combined.
- Fold in half of the sliced strawberries.
- Pour the batter into the prepared pan and smooth the top. Arrange the remaining strawberries on top.
- Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar if desired.
Notes
- To prevent strawberries from sinking, toss them in a little flour before folding into the batter.
- Use ripe but firm strawberries for best texture and flavor.
- You can substitute part of the strawberries with other berries for variation.
- Add lemon zest for a bright, citrusy twist.
- Serve with whipped cream or ice cream for an extra treat.
