Fregola pasta, a unique and delightful dish from Sardinia, features small, toasted pasta with a nutty flavor and chewy texture. It’s perfect with seafood, vegetables, or a simple garlic and tomato sauce, bringing a taste of the Mediterranean to your table.
Ingredients
8 oz fregola pasta
2 tbsp olive oil
2 garlic cloves, minced
1/2 onion, finely chopped
1 cup cherry tomatoes, halved
1/2 cup white wine
1/4 cup chicken or vegetable broth
Salt and pepper to taste
Fresh basil, chopped (for garnish)
Grated Parmesan cheese (optional, for garnish)
Instructions
- Bring a large pot of salted water to a boil and cook the fregola according to package instructions (usually around 10-12 minutes) until al dente. Drain and set aside, reserving some of the pasta cooking water.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until softened and fragrant.
- Add the cherry tomatoes to the skillet and cook for an additional 3-4 minutes until they begin to soften and release their juices.
- Pour in the white wine and let it cook off for about 2 minutes, allowing the sauce to reduce slightly.
- Add the chicken or vegetable broth to the pan and stir to combine. Season with salt and pepper to taste.
- Toss in the cooked fregola and stir well to coat the pasta with the sauce. If the mixture seems dry, add a bit of reserved pasta cooking water to create a silky sauce.
- Remove from heat and garnish with fresh basil and Parmesan cheese, if desired.
- Serve immediately and enjoy!
Notes
- For a seafood twist, add shrimp, clams, or mussels. Sauté seafood with the garlic and onion before adding the rest of the ingredients.
- For a vegetarian version, add roasted zucchini, bell peppers, or mushrooms for more depth and texture.
- Spicy Fregola: Add red pepper flakes or chili powder for an extra kick.
