Description

Fregola pasta, a unique and delightful dish from Sardinia, features small, toasted pasta with a nutty flavor and chewy texture. It’s perfect with seafood, vegetables, or a simple garlic and tomato sauce, bringing a taste of the Mediterranean to your table.


Ingredients

8 oz fregola pasta
2 tbsp olive oil
2 garlic cloves, minced
1/2 onion, finely chopped
1 cup cherry tomatoes, halved
1/2 cup white wine
1/4 cup chicken or vegetable broth
Salt and pepper to taste
Fresh basil, chopped (for garnish)
Grated Parmesan cheese (optional, for garnish)


Instructions

  1. Bring a large pot of salted water to a boil and cook the fregola according to package instructions (usually around 10-12 minutes) until al dente. Drain and set aside, reserving some of the pasta cooking water.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until softened and fragrant.
  3. Add the cherry tomatoes to the skillet and cook for an additional 3-4 minutes until they begin to soften and release their juices.
  4. Pour in the white wine and let it cook off for about 2 minutes, allowing the sauce to reduce slightly.
  5. Add the chicken or vegetable broth to the pan and stir to combine. Season with salt and pepper to taste.
  6. Toss in the cooked fregola and stir well to coat the pasta with the sauce. If the mixture seems dry, add a bit of reserved pasta cooking water to create a silky sauce.
  7. Remove from heat and garnish with fresh basil and Parmesan cheese, if desired.
  8. Serve immediately and enjoy!

Notes

  • For a seafood twist, add shrimp, clams, or mussels. Sauté seafood with the garlic and onion before adding the rest of the ingredients.
  • For a vegetarian version, add roasted zucchini, bell peppers, or mushrooms for more depth and texture.
  • Spicy Fregola: Add red pepper flakes or chili powder for an extra kick.
