Ingredients

For the Creamy Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 22 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice or milk (optional, for consistency)

Instructions

Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 8-inch round cake pans.

  1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time. Mix in mashed bananas and vanilla extract.
  4. Gradually add dry ingredients, alternating with buttermilk, mixing until just combined. Do not overmix.
  5. Pour batter into prepared pan(s) and smooth the top.
  6. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla. Add lemon juice or milk if needed to reach spreadable consistency.
  9. Frost the cooled cake and chill slightly before slicing, if desired.
