Wet Ingredients
- 1 cup all natural creamy peanut butter
- 2 eggs
- 1 tsp vanilla extract
- ½ cup pure maple syrup (or honey)
Dry Ingredients
- 1 cup gluten free old fashioned rolled oats
- ¾ tsp baking powder
- ¾ cup chocolate chips
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and line a baking pan with parchment paper to prepare for baking.
- Mix Wet Ingredients: In a large mixing bowl, combine the creamy peanut butter, eggs, vanilla extract, and pure maple syrup. Stir thoroughly until all ingredients are well blended.
- Add Dry Ingredients: Add the gluten-free rolled oats and baking powder to the wet mixture. Stir again to ensure all the ingredients are fully incorporated.
- Fold in Chocolate Chips: Gently fold the chocolate chips into the dough to distribute them evenly without overmixing.
- Shape Cookies: Use a spoon to scoop and drop balls of dough onto the prepared parchment-lined baking pan. This mixture should make about 10 cookies.
- Bake: Bake the cookies in the preheated oven for 8 to 9 minutes until they are set and slightly golden around the edges.
- Cool: Remove the cookies from the oven and allow them to cool on the pan for 5 minutes. Then transfer them to a cooling rack to cool completely.
