Description

These Flourless Oatmeal Cookies are a quick and easy treat made with wholesome ingredients like peanut butter, oats, and chocolate chips. Naturally gluten-free and sweetened with pure maple syrup, these cookies are perfect for a healthy snack or dessert that comes together in just 15 minutes.

Ingredients

Wet Ingredients

  • 1 cup all natural creamy peanut butter
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup pure maple syrup (or honey)

Dry Ingredients

  • 1 cup gluten free old fashioned rolled oats
  • ¾ tsp baking powder
  • ¾ cup chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and line a baking pan with parchment paper to prepare for baking.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the creamy peanut butter, eggs, vanilla extract, and pure maple syrup. Stir thoroughly until all ingredients are well blended.
  3. Add Dry Ingredients: Add the gluten-free rolled oats and baking powder to the wet mixture. Stir again to ensure all the ingredients are fully incorporated.
  4. Fold in Chocolate Chips: Gently fold the chocolate chips into the dough to distribute them evenly without overmixing.
  5. Shape Cookies: Use a spoon to scoop and drop balls of dough onto the prepared parchment-lined baking pan. This mixture should make about 10 cookies.
  6. Bake: Bake the cookies in the preheated oven for 8 to 9 minutes until they are set and slightly golden around the edges.
  7. Cool: Remove the cookies from the oven and allow them to cool on the pan for 5 minutes. Then transfer them to a cooling rack to cool completely.

Notes

  • Ensure to use gluten-free oats to maintain the cookie’s gluten-free status.
  • For a sweeter cookie, honey can be used instead of maple syrup.
  • Do not overbake to keep the cookies soft and chewy.
  • Store cookies in an airtight container at room temperature for up to 3 days.
  • These cookies can be frozen for up to a month for longer storage.
