Description

Farmers Casserole is a hearty and comforting breakfast dish packed with eggs, potatoes, vegetables, and cheese. Perfect for feeding a crowd or meal prepping, it offers a balanced mix of protein, carbs, and veggies.


Ingredients

  1. 4 cups frozen hash browns or diced potatoes
    1 tablespoon olive oil
    1 small onion, diced
    1 bell pepper, diced
    2 cups fresh spinach or kale, chopped
    8 large eggs
    1 cup milk (dairy or plant-based)
    1 cup shredded cheddar cheese
    1/2 cup cooked bacon or sausage (optional)
    Salt and pepper to taste

Instructions

Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  1. Heat olive oil in a skillet over medium heat. Sauté onion and bell pepper until softened, about 5 minutes. Add spinach and cook until wilted. Remove from heat.
  2. Spread frozen hash browns evenly in the prepared baking dish.
  3. Spread cooked vegetables over potatoes. Add  sausage if using.
  4. In a large bowl, whisk eggs, milk, salt, and pepper.
  5. Pour egg mixture evenly over potatoes and vegetables. Sprinkle shredded cheddar cheese on top.
  6. Bake for 40-45 minutes, until casserole is set and top is golden brown.
  7. Let cool a few minutes before slicing and serving.

Notes

  1. Omit meat or use plant-based alternatives for vegetarian version.
  2. Substitute cheddar with mozzarella, , or feta cheese.
  3. Add extra veggies like mushrooms, zucchini, or tomatoes.
