Description
Eton Mess is a classic British dessert made with crushed meringue, fresh strawberries, and whipped cream. It’s simple, refreshing, and easy to prepare, making it the perfect treat for summer or any casual occasion.
Ingredients
- 2 cups fresh strawberries, hulled and chopped
- 1 tablespoon granulated sugar (optional)
- 1 ½ cups heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 4–6 store-bought or homemade meringue nests, crushed into pieces
Instructions
Hull and chop the strawberries. If not sweet enough, sprinkle with 1 tablespoon of granulated sugar and let sit for 10 minutes to draw out juices.
- Whip the heavy cream with powdered sugar and vanilla extract using an electric mixer until stiff peaks form. Be careful not to over-whip.
- Gently fold the crushed meringue pieces into the whipped cream. Then, fold in the strawberries, making sure everything is evenly mixed.
- Layer or mix the whipped cream, strawberries, and meringue in individual serving glasses or a large bowl.
- Serve immediately for the crunchiest meringue. Optionally, pair with a chilled glass of sparkling wine for a celebratory touch.

- Eton Mess is best served fresh to keep the meringue crunchy.
- If preparing ahead, store meringue, whipped cream, and fruit separately, assembling just before serving.
