Ingredients
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 tsp salt
- 1 tbsp instant espresso powder (or finely ground coffee)
- 1/2 cup semi-sweet chocolate chips (optional for extra richness)
Instructions
Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×9-inch square baking pan or line it with parchment paper for easy removal.
- Prepare the dry ingredients: In a medium-sized bowl, sift together the flour, cocoa powder, salt, and espresso powder. Set aside.
- Mix the wet ingredients: In a separate large bowl, whisk together the melted butter and sugar until smooth and combined. Add the eggs one at a time, whisking after each addition. Stir in the vanilla extract.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until fully incorporated. The batter will be thick.
- Add chocolate chips: If using chocolate chips, fold them into the batter at this point for extra richness.
- Bake the brownies: Pour the batter into the prepared baking pan and spread it out evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs (not wet batter).
- Cool and serve: Allow the brownies to cool in the pan for about 10-15 minutes before slicing. You can enjoy them warm, or let them cool completely before cutting into squares.
Notes
- For a nuttier version, add chopped walnuts or pecans to the batter.
- If you prefer a darker flavor, swap the semi-sweet chocolate chips for dark chocolate chips.
- If you prefer a stronger coffee flavor, feel free to add up to 2 tbsp of espresso powder.
- For a vegan version, use flax eggs or chia seed mixture, and substitute the butter with plant-based butter or coconut oil.
