Description

These wholesome Energy Balls are a nutritious and delicious snack made with almonds, Medjool dates, coconut, and warm spices. They come together quickly in a food processor and provide a perfect grab-and-go energy boost. Coated with shredded coconut or chopped almonds, they offer a delightful texture and flavor that’s both satisfying and healthy.


Ingredients

  • 1 cup whole raw almonds (150g)
  • 1 cup Medjool dates, seeded (about 8-9 large dates, 160g)
  • 1 cup desiccated or unsweetened shredded coconut (70g)
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground clove
  • 1 tablespoon honey (optional)
  • 1/2 teaspoon flaky sea salt

Coating

  • 1 cup desiccated or unsweetened shredded coconut or finely chopped almonds (70g)


Instructions

  1. Blitz the almonds: Place the almonds in a food processor and pulse until they are mostly finely chopped but not powdered, to retain some crunch. If you want extra coating, blitz additional almonds separately.
  2. Finish the energy ball mixture: Add the pitted Medjool dates, 1 cup shredded coconut, olive oil, ground cinnamon, ground clove, honey (if using), and flaky sea salt to the food processor. Pulse for 30-50 seconds or until the mixture is sticky enough to hold shape when squeezed between your hands. Adjust texture by adding a few drops of olive oil if too dry, or extra coconut if too wet.
  3. Portion the mixture: Using a 1 1/2-inch cookie scoop or a tablespoon, portion the mixture and press firmly between your palms to form balls. If sticky, slightly wet your hands before shaping. Repeat until all mixture is used.
  4. Coat and store: Roll each ball in desiccated coconut or chopped almonds for coating. Place the coated balls in the freezer for 30 minutes to firm up. Store energy balls in a sealed container in the fridge or freezer for freshness.

Notes

  • For a crunchier texture, do not over-process the almonds into powder.
  • Honey is optional; omit for a vegan version or substitute with maple syrup.
  • Rolling hands slightly wet helps with shaping sticky mixture.
  • Energy balls can be stored in the fridge for up to 1 week or frozen for up to 3 months.
