These Easy Strawberry Shortcake Truffles combine the classic flavors of strawberry shortcake into bite-sized treats. Made with crushed Golden Oreos, freeze-dried strawberries, cream cheese, and coated in vanilla almond bark, these truffles are smooth, creamy, and perfect for parties or a sweet snack.

Truffle Mixture
- 36 Golden Oreos (whole cookies)
- 1 (1 ounce) bag freeze-dried strawberries
- 8 ounces brick-style cream cheese, softened

- 1 pound vanilla almond bark

- Prepare the baking sheet: Line a baking sheet with parchment paper and set it aside to place the truffles on later.
- Process Oreos and strawberries: Add the whole Golden Oreos and freeze-dried strawberries into a food processor and pulse until you get fine crumbs. Remove 1 tablespoon of these crumbs and set aside for garnish.
- Mix with cream cheese: Transfer the remaining crumbs to a large bowl. Using an electric hand mixer, beat the softened cream cheese into the crumbs until the mixture is smooth and fully combined.
- Form the truffles: Scoop the mixture into 1-tablespoon portions and roll each into a smooth ball. Place the formed balls onto the prepared baking sheet.
- Freeze to firm up: Place the baking sheet in the freezer and chill the truffles for 30 minutes so they firm up and hold their shape.
- Melt the almond bark: Following package instructions, melt the vanilla almond bark until smooth and ready for dipping.
- Dip the truffles: Remove the truffles from the freezer. Dip each truffle into the melted almond bark, allowing any excess coating to drip off, then return the coated truffles to the baking sheet.
- Garnish and set: Drizzle extra melted almond bark over the truffles and sprinkle with the reserved Oreo crumbs for added texture and decoration. Let the truffles set completely before serving or storing.
Notes
- To speed up setting, you can place the dipped truffles back into the freezer for 10-15 minutes.
- Store truffles in an airtight container in the refrigerator for up to one week.
- If no vanilla almond bark is available, white chocolate chips can be used as a substitute.
