Easy Seven Layer Cookie Bars are rich, chewy dessert bars made with layers of graham cracker crust, chocolate chips, butterscotch chips, coconut, and nuts, all held together with sweetened condensed milk. A quick, no-fuss recipe perfect for any occasion.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup (1 stick) unsalted butter, melted
- 1 can (14 oz) sweetened condensed milk
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
- 1 1/3 cups sweetened shredded coconut
- 1 cup chopped walnuts or pecans
Instructions
Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
- In a small bowl, mix the graham cracker crumbs with melted butter until well combined.
- Press the mixture firmly into the bottom of the prepared pan to form a crust.
- Pour the sweetened condensed milk evenly over the crust.
- Sprinkle chocolate chips and butterscotch chips evenly over the milk layer.
- Top with shredded coconut and chopped nuts.
- Gently press down on the layers with the back of a spatula.
- Bake for 25–30 minutes, or until the top is golden brown and edges are bubbly.
- Let the bars cool completely in the pan before slicing into squares.
Notes
- Omit nuts or replace with seeds or pretzels for a nut-free version.
- Try peanut butter or white chocolate chips instead of butterscotch.
- Refrigerate for firmer bars or serve at room temperature for a gooier texture.
- Use parchment paper for easy removal and clean slicing.
- These bars freeze well for up to 2 months.
