Description

Ingredients
- 1 package of wonton wrappers (about 20-30 wrappers)
 - 1 tablespoon melted butter
 - 1 tablespoon sugar
 - ½ teaspoon ground cinnamon
 - 2 cups ricotta cheese (drained if wet)
 - ½ cup powdered sugar
 - 1 teaspoon vanilla extract
 - 1 teaspoon lemon zest (or orange zest)
 - ¼ cup mini chocolate chips (optional)
 - ¼ cup chopped pistachios or candied fruit (optional)

Instructions
Preheat the oven to 350°F (175°C).
- Prepare the pastry cups: Brush each wonton wrapper with melted butter and sprinkle with sugar and cinnamon. Press the wrappers into the cups of a mini muffin tin and bake for 8-10 minutes, until golden and crispy. Let cool completely in the tin.
 - Make the filling: Combine ricotta cheese, powdered sugar, vanilla extract, and lemon zest in a bowl. Stir until smooth. Optionally, fold in mini chocolate chips, pistachios, or candied fruit.
 - Once the pastry cups are cool, fill them with the ricotta mixture using a spoon or piping bag.
 - Garnish with powdered sugar and optional toppings such as chocolate chips, pistachios, or candied fruit.
 - Serve immediately, or store in the fridge for up to 1-2 days.
 
Notes
- For a chocolate twist, you can add cocoa powder to the ricotta filling or dip the tops in melted chocolate.
 - For a lighter option, bake the croquettes at 375°F (190°C) for 20 minutes, flipping halfway through.
 - If you prefer, substitute phyllo dough for wonton wrappers, but the texture will be different.
 - Store the pastry cups separately from the filling to keep them crispy if preparing in advance.
 - For a gluten-free option, use gluten-free wonton wrappers or make your own pastry cups from gluten-free dough.
