Description
These Easy Mini Apple Pies are a delightful treat featuring tender cinnamon-spiced apple filling nestled in flaky puff pastry cups. Perfect as a quick dessert or snack, they combine the warm flavors of baked apples with the buttery crispness of puff pastry for a comforting and elegant bite-sized pie.
Ingredients
Pastry
- 1 box Puff Pastry
Apple Filling
- 3 cups apples, peeled and chopped into ¾” pieces
- ½ cup sugar
- 1 tsp cinnamon
- 1 tsp vanilla extract
- ½ cup water
Topping
- 1 egg (for egg wash)
Instructions
- Cook the Apple Filling: In a medium saucepan over medium heat, combine the chopped apples, cinnamon, sugar, vanilla extract, and water. Cook, stirring occasionally, for 8-10 minutes until the apples are tender but not mushy, and the mixture has thickened slightly.
- Prepare the Puff Pastry: While the filling cooks, slice the puff pastry dough into 12 equal-sized squares. Ensure the dough is kept cold for easier handling.
- Line the Muffin Tin: Grease a muffin tin thoroughly. Press each puff pastry square into each cup, shaping it to fit snugly and covering the bottom and sides completely. Reserve extra dough for decorative toppings.
- Fill the Cups: Spoon the warm apple filling into each pastry-lined muffin cup, filling about ¾ of the way to leave room for the top crust.
- Add Decorative Toppings: Use the remaining puff pastry to cut out shapes like hearts, leaves, or strips for a lattice design. Place a decorative piece over each filled cup to form a lid.
- Apply Egg Wash: Beat the egg and brush it generously over the top of each mini pie to promote a golden, shiny crust.
- Bake the Mini Pies: Preheat the oven to 400°F (204°C). Bake the pies for 18-20 minutes or until the puff pastry is puffed up and golden brown.
- Cool and Serve: Remove from the oven and allow the mini pies to cool slightly before carefully removing them from the muffin tin. Serve warm or at room temperature.
Notes
- Use tart apples like Granny Smith or Honeycrisp for best flavor and texture.
- If puff pastry is frozen, thaw it according to package instructions before use.
- You can add a pinch of nutmeg or cloves to the apple filling for extra spice.
- Make sure the muffin tin is well-greased to easily remove the pies after baking.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in a warm oven to crisp the pastry before serving again.
