Description

Discover the delightful fusion of earthy matcha and sweet white chocolate in these Easy Matcha Cookies. Perfectly soft with a vibrant green hue and a hint of nutty crunch from pecan and almond slices, this recipe combines simple ingredients for an impressive homemade treat that’s sure to please any matcha lover.

Ingredients

Dry Ingredients

  • 2⅔ cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 tablespoons cornstarch
  • 2 tablespoons matcha powder

Wet Ingredients

  • 1 cup unsalted butter (room temperature)
  • 1½ cups brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract (optional)

Add-ins & Garnish

  • ½ cup white chocolate chips
  • ¼ cup pecan and almond slices mix (for garnish)

Instructions

  1. Prepare Ingredients: Gather all ingredients. Sift the all-purpose flour, baking soda, cornstarch, and matcha powder into a medium bowl to remove lumps and evenly combine. Set butter to room temperature.
  2. Make Butter Mixture: In a large mixing bowl, use an electric mixer to beat together the room temperature butter, brown sugar, eggs, and vanilla extract until fully combined and creamy.
  3. Combine Dry and Wet: Gradually add the sifted dry ingredients to the wet butter mixture, stirring continuously until a consistent dough forms. The dough will have a vibrant green color from the matcha. If the dough seems too dry, add one teaspoon of hot water to help it come together smoothly.
  4. Fold in White Chocolate: Gently fold the white chocolate chips into the dough using a silicone spatula, ensuring even distribution without overmixing.
  5. Chill Dough: Cover the cookie dough with plastic wrap and chill it in the refrigerator for at least 15 minutes. This step helps the dough hold its shape during baking.
  6. Preheat Oven and Prepare Baking Sheet: While the dough chills, preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure easy cleanup.
  7. Form Cookies: Use a cookie scoop to form uniform dough balls and place them evenly spaced on the prepared baking sheet. Press pecan and almond slices on top of each dough ball for garnish and added texture.
  8. Bake Cookies: Bake in the preheated oven for 10 to 12 minutes, until the cookie edges are set but the centers remain soft. The cookies will firm up further as they cool.
  9. Cool and Enjoy: Allow cookies to cool on the baking sheet for 1 to 2 minutes before transferring to a wire rack to cool completely. Serve and enjoy your matcha white chocolate cookies!

Notes

  • Make sure to sift the dry ingredients well to avoid lumps and ensure even color and texture.
  • Chilling the dough helps the cookies maintain their shape and creates a better texture.
  • If you prefer a stronger matcha flavor, increase the matcha powder to 3 tablespoons, but be aware it may slightly raise the dough’s bitterness.
  • Use room temperature butter for easier mixing and better texture.
  • Press nuts gently on top instead of mixing in to keep their crunch and appearance.
  • Cookies will be soft when taken out of the oven but will firm up as they cool.
