Description

Easy Blueberry Yogurt Parfaits are a quick, nutritious, and delicious way to enjoy a healthy breakfast or snack. This simple yet satisfying treat layers creamy yogurt with fresh blueberries and crunchy granola, creating the perfect balance of texture and flavor.

Ingredients

  1. 1 cup Greek yogurt (or non-dairy yogurt for a dairy-free option)
  2. 1/2 cup fresh blueberries (or frozen if fresh isn’t available)
  3. 1/4 cup granola (store-bought or homemade)
  4. 1 tablespoon honey or maple syrup (optional, for sweetness)
  5. A sprinkle of cinnamon or vanilla extract (optional, for extra flavor)
  6. 1 tablespoon chia seeds or flaxseeds (optional, for added fiber)
  7. A few mint leaves (optional, for garnish)

Instructions

In a bowl, mix the Greek yogurt with honey or maple syrup (if using) for sweetness. You can also add a dash of cinnamon or vanilla extract for extra flavor.

  1. In a clear glass or jar, begin by adding a spoonful of the sweetened yogurt as the first layer. Then, add a few fresh blueberries on top of the yogurt.
  2. Spoon in a layer of granola over the blueberries. This adds a satisfying crunch to the parfait.
  3. Continue layering the yogurt, blueberries, and granola until you reach the top of the glass. You should have at least 2 layers of yogurt, blueberries, and granola.
  4. Finish the parfait with a handful of blueberries on top. Optionally, sprinkle chia seeds or flaxseeds for added nutrition and garnish with fresh mint leaves.
  5. Serve immediately, or refrigerate for a couple of hours for a chilled treat.

Notes

  1. If you have leftover parfaits, store them in an airtight container in the fridge for up to 1 day. The granola may lose its crunch, so it’s best to add it just before serving.
  2. You can prepare the parfaits ahead of time and store them in the fridge for up to 4 hours. For crunch, store the granola separately and add it just before serving.
  3. Frozen blueberries can be used if fresh ones aren’t available. Let them thaw for a few minutes or use them directly from the freezer for a colder texture.
  4. You can swap yogurt with dairy-free options like coconut or almond yogurt, and honey can be substituted with maple syrup for a vegan version.
