Description
Easy Blueberry Yogurt Parfaits are a quick, nutritious, and delicious way to enjoy a healthy breakfast or snack. This simple yet satisfying treat layers creamy yogurt with fresh blueberries and crunchy granola, creating the perfect balance of texture and flavor.
Ingredients
- 1 cup Greek yogurt (or non-dairy yogurt for a dairy-free option)
- 1/2 cup fresh blueberries (or frozen if fresh isn’t available)
- 1/4 cup granola (store-bought or homemade)
- 1 tablespoon honey or maple syrup (optional, for sweetness)
- A sprinkle of cinnamon or vanilla extract (optional, for extra flavor)
- 1 tablespoon chia seeds or flaxseeds (optional, for added fiber)
- A few mint leaves (optional, for garnish)
Instructions
In a bowl, mix the Greek yogurt with honey or maple syrup (if using) for sweetness. You can also add a dash of cinnamon or vanilla extract for extra flavor.
- In a clear glass or jar, begin by adding a spoonful of the sweetened yogurt as the first layer. Then, add a few fresh blueberries on top of the yogurt.
- Spoon in a layer of granola over the blueberries. This adds a satisfying crunch to the parfait.
- Continue layering the yogurt, blueberries, and granola until you reach the top of the glass. You should have at least 2 layers of yogurt, blueberries, and granola.
- Finish the parfait with a handful of blueberries on top. Optionally, sprinkle chia seeds or flaxseeds for added nutrition and garnish with fresh mint leaves.
- Serve immediately, or refrigerate for a couple of hours for a chilled treat.
Notes
- If you have leftover parfaits, store them in an airtight container in the fridge for up to 1 day. The granola may lose its crunch, so it’s best to add it just before serving.
- You can prepare the parfaits ahead of time and store them in the fridge for up to 4 hours. For crunch, store the granola separately and add it just before serving.
- Frozen blueberries can be used if fresh ones aren’t available. Let them thaw for a few minutes or use them directly from the freezer for a colder texture.
- You can swap yogurt with dairy-free options like coconut or almond yogurt, and honey can be substituted with maple syrup for a vegan version.
