Ingredients

Apples

  • 2 medium-sized apples (sweet, tart and crisp, such as Honeycrisp or Empire)

Puff Pastry

  • 1 sheet frozen puff pastry, thawed

Filling and Coating

  • 4 tbsp granulated sugar
  • 1-2 tsp ground cinnamon
  • 3 tbsp butter, melted
  • 1/4 cup finely chopped walnuts

Finishing

  • 1 tbsp powdered sugar (for dusting)

Other

  • Lemon juice (to prevent apple slices browning, quantity sufficient to cover apples in water)


Instructions

  1. Preheat Oven and Prepare Muffin Tin: Preheat your oven to 400°F (375°F if you use a convection oven). Line 6 of the 12 muffin cups in a muffin tin with paper liners to hold the apple roses during baking.
  2. Prepare Apples: Cut the apples in half and carefully remove the cores and seeds using a sharp knife or apple corer. Then slice the apples into very thin slices, about 1/8 inch thick.
  3. Soften Apples: Place the apple slices in a bowl and cover them with water and lemon juice to prevent browning. Let them soak for 5 minutes to slightly soften the slices.
  4. Microwave to Soften: Remove the apple slices from the water, drain well, and place them on a paper towel. Microwave the slices for 3 minutes to further soften, then pat dry with a second paper towel.
  5. Prepare Puff Pastry: Unroll the thawed puff pastry sheet on a lightly floured surface. Gently elongate it with a rolling pin to stretch the dough.
  6. Cut Pastry Strips: Cut the puff pastry sheet lengthwise into 6 even strips. To do this, you can first cut into thirds and then cut each third in half.
  7. Butter and Sprinkle: Brush one side of each pastry strip with melted butter and sprinkle evenly with the cinnamon and granulated sugar mixture.
  8. Arrange Apple Slices: Starting at one long side of a pastry strip, place apple slices with the curved side sticking out over the top half of the strip, overlapping them slightly to create a petal effect.
  9. Fold and Roll: Fold the bottom half of the pastry strip up to sandwich the apples, then carefully roll the strip from one end to the other to form a rose shape. If the roll unravels, brush a bit of melted butter to help seal it.
  10. Optional Walnut Coating: Brush the bottom and lower sides of each apple rose with melted butter and dip into chopped walnuts to coat them partially.
  11. Place in Muffin Liners: Set each apple rose into the prepared muffin liners in the muffin tin.
  12. Bake: Bake in the preheated oven at 400°F for 40-45 minutes or until the pastry is golden brown and the apples have caramelized.
  13. Cool: Allow the apple roses to cool in the muffin tin for about 5 minutes, then transfer them to a wire rack.
  14. Optional Dusting: Using a sifter, dust the tops of the apple roses with powdered sugar for an elegant finish.
