Fruit Filling
- 1 14.5 oz can Oregon Red Tart Cherries, drained (reserve juice from one can)
- 1 14.5 oz can Oregon Rhubarb, drained (reserve juice from one can)
- 2/3 cup granulated sugar
- 1/3 cup all-purpose flour
Cobbler Topping
- 1 cup all-purpose flour
- 1 cup granulated sugar (or 2/3 cup for less sweetness)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk of choice (unsweetened almond milk recommended)
- 6 tablespoons unsalted butter, melted
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly spray a 9-inch baking pan with non-stick cooking spray to prevent sticking.
- Make the Rhubarb Cherry Filling: Drain the juice off one of the cans (either rhubarb or cherries) leaving the other can with the juice. Pour both drained fruits into the prepared pan. Add 2/3 cup granulated sugar and 1/3 cup flour, then mix gently until the fruit is evenly coated and combined.
- Prepare the Cobbler Topping: In a large bowl, whisk together 1 cup flour, 1 cup sugar (or 2/3 cup for less sweetness), baking powder, and salt. Add the 3/4 cup milk and the melted butter, stirring just until combined. The batter should be thin and slightly lumpy—be careful not to overmix to keep the topping tender.
- Assemble the Cobbler: Pour the cobbler topping evenly over the rhubarb cherry mixture in the baking pan. It’s okay if some fruit edges remain uncovered.
- Bake the Cobbler: Place the pan in the preheated oven and bake for 45 to 55 minutes, until the topping is set and golden brown.
- Cool and Serve: Let the cobbler rest for about 15 minutes after baking. Serve warm, ideally topped with a scoop of vanilla ice cream or whipped cream for extra indulgence.
