Description

Ingredients

  1. For the cake:
  2. 2 cups all-purpose flour
  3. 1 1/2 teaspoons baking powder
  4. 1/2 teaspoon baking soda
  5. 1/2 teaspoon ground cinnamon
  6. 1/4 teaspoon salt
  7. 1/2 cup unsalted butter, softened
  8. 1 cup granulated sugar
  9. 2 large eggs
  10. 1 teaspoon vanilla extract
  11. 1/2 cup buttermilk (or substitute with whole milk)
  12. 2 cups peeled and chopped apples (such as Granny Smith or Honeycrisp)
  13. For the streusel topping:
  14. 1/2 cup all-purpose flour
  15. 1/3 cup granulated sugar
  16. 1/4 cup unsalted butter, cold and cubed
  17. 1/2 teaspoon ground cinnamon

Instructions

Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  2. In a large bowl, beat together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Gently fold in the chopped apples.
  6. Pour the batter into the prepared cake pan, spreading it evenly.
  7. In a separate bowl, prepare the streusel topping. Combine the flour, sugar, cinnamon, and cold butter. Use a pastry cutter or your fingers to work the butter into the dry ingredients until it resembles coarse crumbs.
  8. Sprinkle the streusel evenly over the batter.
  9. Bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean and the top is golden brown.
  10. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  1. Add chopped walnuts, pecans, or almonds for added crunch in the batter or streusel topping.
  2. Use pears or peaches as an alternative to apples for a twist on the recipe.
  3. For a spiced version, add a pinch of nutmeg or cloves to the batter.
  4. If you don’t have buttermilk, substitute with regular milk or make your own by adding 1 tablespoon lemon juice or vinegar to 1/2 cup milk and letting it sit for 5 minutes.
