Ingredients
- For the cake:
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk (or substitute with whole milk)
- 2 cups peeled and chopped apples (such as Granny Smith or Honeycrisp)
- For the streusel topping:
- 1/2 cup all-purpose flour
- 1/3 cup granulated sugar
- 1/4 cup unsalted butter, cold and cubed
- 1/2 teaspoon ground cinnamon
Instructions
Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
- In a large bowl, beat together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the chopped apples.
- Pour the batter into the prepared cake pan, spreading it evenly.
- In a separate bowl, prepare the streusel topping. Combine the flour, sugar, cinnamon, and cold butter. Use a pastry cutter or your fingers to work the butter into the dry ingredients until it resembles coarse crumbs.
- Sprinkle the streusel evenly over the batter.
- Bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean and the top is golden brown.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- Add chopped walnuts, pecans, or almonds for added crunch in the batter or streusel topping.
- Use pears or peaches as an alternative to apples for a twist on the recipe.
- For a spiced version, add a pinch of nutmeg or cloves to the batter.
- If you don’t have buttermilk, substitute with regular milk or make your own by adding 1 tablespoon lemon juice or vinegar to 1/2 cup milk and letting it sit for 5 minutes.
