Description

Dr Pepper Cake with Fudge Frosting is a moist Southern chocolate cake infused with the sweet-spiced flavor of Dr Pepper and topped with a warm, gooey fudge frosting poured directly onto the hot cake. A nostalgic, crowd-pleasing dessert.


Ingredients

  1. 2 cups all-purpose flour
  2. 2 cups granulated sugar
  3. 1 tsp baking soda
  4. 1 tsp ground cinnamon
  5. 1/2 tsp salt
  6. 1 cup unsalted butter
  7. 1/4 cup unsweetened cocoa powder
  8. 1 cup Dr Pepper (regular)
  9. 1/2 cup buttermilk
  10. 2 large eggs
  11. 1 tsp vanilla extract

For the Fudge Frosting:

  • 1/2 cup unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup Dr Pepper
  • 3 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans (optional)

Instructions

Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

  1. In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
  2. In a saucepan over medium heat, combine butter, cocoa powder, and Dr Pepper. Bring just to a boil while stirring, then remove from heat.
  3. Pour the warm Dr Pepper mixture into the dry ingredients and stir until just combined.
  4. In a separate bowl, whisk together buttermilk, eggs, and vanilla extract. Stir into the batter until smooth.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the cake bakes, prepare the frosting: In a saucepan, melt butter with cocoa powder and Dr Pepper over medium heat. Bring to a simmer.
  8. Remove from heat and whisk in powdered sugar and vanilla until smooth. Stir in chopped pecans if using.
  9. Pour the warm frosting evenly over the hot cake immediately after it comes out of the oven.
  10. Let the cake cool slightly before slicing and serving.

Notes

  • Do not use diet Dr Pepper; the sugar in regular soda adds to the flavor and texture.
  • Pour frosting over the cake while both are warm for best absorption and gooey texture.
  • To make buttermilk substitute: use 1/2 cup milk + 1/2 tbsp vinegar or lemon juice.
  • Cherry Dr Pepper can be used for a fun flavor variation.
  • This cake tastes even better the next day once flavors develop.
