Description
Dr Pepper Cake with Fudge Frosting is a moist Southern chocolate cake infused with the sweet-spiced flavor of Dr Pepper and topped with a warm, gooey fudge frosting poured directly onto the hot cake. A nostalgic, crowd-pleasing dessert.
Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 cup unsalted butter
- 1/4 cup unsweetened cocoa powder
- 1 cup Dr Pepper (regular)
- 1/2 cup buttermilk
- 2 large eggs
- 1 tsp vanilla extract
For the Fudge Frosting:
- 1/2 cup unsalted butter
- 1/4 cup unsweetened cocoa powder
- 1/3 cup Dr Pepper
- 3 1/2 cups powdered sugar
- 1 tsp vanilla extract
- 1/2 cup chopped pecans (optional)
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
- In a saucepan over medium heat, combine butter, cocoa powder, and Dr Pepper. Bring just to a boil while stirring, then remove from heat.
- Pour the warm Dr Pepper mixture into the dry ingredients and stir until just combined.
- In a separate bowl, whisk together buttermilk, eggs, and vanilla extract. Stir into the batter until smooth.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake bakes, prepare the frosting: In a saucepan, melt butter with cocoa powder and Dr Pepper over medium heat. Bring to a simmer.
- Remove from heat and whisk in powdered sugar and vanilla until smooth. Stir in chopped pecans if using.
- Pour the warm frosting evenly over the hot cake immediately after it comes out of the oven.
- Let the cake cool slightly before slicing and serving.
Notes
- Do not use diet Dr Pepper; the sugar in regular soda adds to the flavor and texture.
- Pour frosting over the cake while both are warm for best absorption and gooey texture.
- To make buttermilk substitute: use 1/2 cup milk + 1/2 tbsp vinegar or lemon juice.
- Cherry Dr Pepper can be used for a fun flavor variation.
- This cake tastes even better the next day once flavors develop.
