Strawberry Cream Cheese Icing
- 2 ounces cream cheese

- 3-4 tablespoons freeze dried strawberry powder (from the remaining powdered strawberries)
Instructions
- Prepare strawberry powder: In a blender or food processor, process the freeze-dried strawberries into a fine powder to use both in the dough and frosting.
- Preheat and prepare baking sheet: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper for easy cookie removal and even baking.
- Make the cookie dough: In a large mixing bowl, beat together the room temperature salted butter, granulated sugar, and vanilla extract until creamy and combined. Then, beat in the egg until smooth. Gradually add the all-purpose flour, baking soda, 1/4 cup of the prepared strawberry powder, and kosher salt; mix until just combined.
