Description

Double Chocolate Madeleines are delicate French sponge cakes infused with cocoa and studded with chocolate chips, often finished with a chocolate drizzle or dip. Light, elegant, and indulgent, they’re perfect with coffee or tea.


Ingredients

  1. 1/2 cup unsalted butter, melted and cooled
  2. 2/3 cup granulated sugar
  3. 2 large eggs
  4. 1 teaspoon vanilla extract
  5. 3/4 cup all-purpose flour
  6. 1/4 cup unsweetened cocoa powder
  7. 1 teaspoon baking powder
  8. 1/4 teaspoon salt
  9. 1/2 cup mini chocolate chips or finely chopped chocolate
  10. Additional melted chocolate for dipping or drizzling (optional)

Instructions

In a bowl, whisk together eggs and sugar until pale and slightly thickened. Stir in vanilla extract.

  1. In another bowl, sift together flour, cocoa powder, baking powder, and salt. Gently fold into the egg mixture.
  2. Add melted butter and fold until incorporated, then stir in mini chocolate chips.
  3. Cover the batter and chill for at least 1 hour.
  4. Preheat oven to 375°F (190°C). Grease and flour a madeleine pan.
  5. Spoon about 1 tablespoon of batter into each mold, filling 3/4 full.
  6. Bake for 8–10 minutes, until centers spring back when lightly pressed.
  7. Cool slightly, remove from pan, and drizzle or dip in melted chocolate if desired.

  • Chilling the batter is key for the signature hump.
  • Dust with powdered sugar for a classic finish.
  • Add orange zest, espresso powder, or sea salt for flavor variations.
  • Madeleines are best eaten fresh the day they’re baked.
