Description
Double Chocolate Madeleines are delicate French sponge cakes infused with cocoa and studded with chocolate chips, often finished with a chocolate drizzle or dip. Light, elegant, and indulgent, they’re perfect with coffee or tea.
Ingredients
- 1/2 cup unsalted butter, melted and cooled
- 2/3 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips or finely chopped chocolate
- Additional melted chocolate for dipping or drizzling (optional)
Instructions
In a bowl, whisk together eggs and sugar until pale and slightly thickened. Stir in vanilla extract.
- In another bowl, sift together flour, cocoa powder, baking powder, and salt. Gently fold into the egg mixture.
- Add melted butter and fold until incorporated, then stir in mini chocolate chips.
- Cover the batter and chill for at least 1 hour.
- Preheat oven to 375°F (190°C). Grease and flour a madeleine pan.
- Spoon about 1 tablespoon of batter into each mold, filling 3/4 full.
- Bake for 8–10 minutes, until centers spring back when lightly pressed.
- Cool slightly, remove from pan, and drizzle or dip in melted chocolate if desired.
Notes
- Chilling the batter is key for the signature hump.
- Dust with powdered sugar for a classic finish.
- Add orange zest, espresso powder, or sea salt for flavor variations.
- Madeleines are best eaten fresh the day they’re baked.
- Can be frozen for up to 2 months and thawed at room temperature.
