Ingredients

Pastry

  • 1 batch Basic Shortcrust Pastry

Filling

  • 2 to 3 cups Strawberries, chopped
  • 1/4 cup Cornflour (Cornstarch)


Instructions

  1. Prepare the Pie Crust: Begin by making the basic shortcrust pastry and chill it in the refrigerator for at least 30 minutes to firm up.
  2. Line the Pie Plate: Take half of the chilled pastry dough and roll it out between two sheets of plastic wrap. Use this rolled pastry to line your pie plate, trimming off any excess dough. Place the lined pie dish back into the fridge while you prepare the filling.
  3. Make the Filling: In a mixing bowl, combine the chopped strawberries, sugar, and cornflour. Mix everything well until evenly incorporated. Set this filling mixture aside.
  4. Preheat the Oven: Set your oven temperature to 200°C (400°F) to prepare for baking.
  5. Prepare the Lattice Top: Roll out the remaining half of the pastry and cut it into strips for the lattice top of the pie.
  6. Assemble the Pie: Spoon the prepared strawberry filling into the chilled pie crust. Arrange the pastry strips on top of the filling in a lattice pattern.
  7. Finish the Top: Brush the lattice crust with milk and sprinkle some sugar over it for a golden, sweet finish.
