Description

Date Snickers are a healthy, delicious twist on the classic candy bar. Ingredients

  1. 1 cup dates (pitted)
  2. 1/2 cup peanuts (unsalted)
  3. 1/4 cup peanut butter
  4. 1/2 teaspoon vanilla extract
  5. 1 cup dark chocolate (preferably 70% cacao)

Instructions

Prepare the date caramel: In a food processor, pulse the pitted dates until they form a sticky, cohesive dough.

  1. Add peanut butter: Add the peanut butter and vanilla extract to the food processor, then pulse until the mixture is smooth.
  2. Prepare the pan: Line a small baking dish (about 8×8 inches) with parchment paper. Press the date caramel mixture into the dish evenly, forming a layer about 1/2 inch thick.
  3. Sprinkle the peanuts: Sprinkle the unsalted peanuts on top of the date caramel layer, pressing them in gently so they stick.
  4. Melt the chocolate: Melt the dark chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth and fully melted.
  5. Pour the chocolate: Pour the melted chocolate over the date and peanut layers, spreading it evenly with a spatula.
  6. Chill: Refrigerate the Date Snickers for at least 2 hours, or until the chocolate has hardened.
  7. Serve: Once chilled, remove the bars from the dish and cut them into rectangular pieces, resembling traditional Snickers bars.
