The Cucumber Sandwich is a classic, refreshing, and light snack or lunch featuring thinly sliced cucumbers layered between soft bread with a creamy spread. Perfect for tea parties, picnics, or a crisp bite anytime.
Ingredients
- 8 slices white or whole wheat bread, crusts removed if desired
- 1 medium cucumber, thinly sliced
- 4 ounces cream cheese, softened
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 teaspoon lemon juice
- Salt and freshly ground black pepper, to taste
- Optional: butter or mayonnaise for spreading
Instructions
In a small bowl, mix softened cream cheese, dill, lemon juice, salt, and pepper until smooth.
- Spread a thin layer of cream cheese mixture evenly on each slice of bread.
- Arrange cucumber slices evenly over half of the bread slices.
- Top with the remaining bread slices, cream cheese side down, to form sandwiches.
- Press gently and cut sandwiches into halves or quarters.
- Serve immediately or chill for 15-20 minutes for flavors to meld.
Notes
- Use flavored cream cheese such as garlic and herb or chive.
- Add thinly sliced radishes or sprouts for extra crunch.
- Substitute bread with gluten-free or multigrain options.
- Spread mayonnaise or hummus instead of cream cheese.
- Sprinkle with cracked black pepper or paprika for a subtle kick.
