Description

Ingredients

  1. 2 large cucumbers, sliced thinly
  2. 1/2 small red onion, thinly sliced
  3. 1/4 cup fresh dill, chopped
  4. 1/4 cup fresh parsley, chopped
  5. 1/4 cup white vinegar
  6. 1 tablespoon olive oil
  7. 1 teaspoon sugar
  8. Salt and pepper, to taste

Instructions

Begin by washing and slicing the cucumbers thinly. If desired, you can peel them, but leaving the skin on adds a nice crunch and color.

  1. Slice the red onion thinly and chop the dill and parsley.
  2. In a large bowl, combine the cucumbers, red onion, dill, and parsley.
  3. In a small bowl, whisk together the white vinegar, olive oil, sugar, salt, and pepper. Taste and adjust seasoning as needed.
  4. Pour the dressing over the cucumber mixture and toss gently to combine, ensuring everything is well-coated.
  5. Let the salad sit for 10-15 minutes before serving to allow the flavors to meld together. Serve chilled or at room temperature.
