Ingredients
- 2 large cucumbers, sliced thinly
- 1/2 small red onion, thinly sliced
- 1/4 cup fresh dill, chopped

Instructions
Begin by washing and slicing the cucumbers thinly. If desired, you can peel them, but leaving the skin on adds a nice crunch and color.
- Slice the red onion thinly and chop the dill and parsley.
- In a large bowl, combine the cucumbers, red onion, dill, and parsley.
- In a small bowl, whisk together the white vinegar, olive oil, sugar, salt, and pepper. Taste and adjust seasoning as needed.
- Pour the dressing over the cucumber mixture and toss gently to combine, ensuring everything is well-coated.
- Let the salad sit for 10-15 minutes before serving to allow the flavors to meld together. Serve chilled or at room temperature.
