Ingredients
4 boneless, skinless chicken breasts
1 onion, diced
2 celery stalks, diced
2 large carrots, sliced
3 cloves garlic, minced
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried parsley
1 bay leaf
4 cups chicken broth
1 can (10.5 oz) cream of chicken soup
1 can (10.5 oz) cream of celery soup
1 cup frozen peas
2 cups biscuit mix (like Bisquick)
2/3 cup milk
1 tablespoon butter, melted
1 tablespoon parsley (optional for garnish)
Instructions

Place the chicken breasts at the bottom of the crockpot. Add the diced onion, celery, carrots, and minced garlic. Sprinkle with salt, pepper, thyme, parsley, and add the bay leaf. Pour in the chicken broth, followed by the cream of chicken soup and cream of celery soup. Stir everything to combine.

Cover the crockpot and cook on low for 6-7 hours, or on high for 3-4 hours.

About 30 minutes before the cooking time ends, prepare the dumplings. In a mixing bowl, combine the biscuit mix, milk, and melted butter. Stir until just combined.

Drop spoonfuls of the dumpling mixture over the chicken mixture in the crockpot. Sprinkle the frozen peas on top.

Cover and cook on high for the last 30 minutes until the dumplings are cooked through and expanded.
