Description

This delicious Crock Pot Peach Cobbler is a simple and comforting dessert made using fresh peaches, sweetened with brown sugar and cinnamon, topped with a vanilla cake mix and butter, then slow-cooked to perfection in a crock pot. Perfect for an easy, hands-off sweet treat with a warm, fruity flavor and tender cake topping.

Ingredients

Fruit Mixture

  • 4 cups fresh sliced peaches
  • ¼ cup packed light brown sugar
  • 1 teaspoon ground cinnamon

Topping

  • 1 box vanilla cake mix (white, yellow, or spice cake mix)
  • ½ cup (1 stick) unsalted butter, cut into thin slices (can use salted butter)

Instructions

  1. Prepare the Crock Pot: Spray the inside of a 4-6 quart crock pot generously with non-stick cooking spray to prevent the cobbler from sticking while cooking.
  2. Add Peaches: Place 4 cups of fresh sliced peaches into the crock pot evenly spreading them as the base layer.
  3. Mix Peaches with Sugar and Cinnamon: Sprinkle ¼ cup packed light brown sugar and 1 teaspoon ground cinnamon over the peaches, then gently toss to coat all the peach slices thoroughly, ensuring an even blend of sweetness and spice.
  4. Add Cake Mix: Evenly sprinkle one box of vanilla cake mix uniformly over the peach mixture, spreading it to cover fully and create a layer that will bake into the topping.
  5. Add Butter: Cut ½ cup (one stick) of unsalted butter into thin slices and distribute these pats all over the surface of the cake mix to help create a rich, moist topping as it melts during cooking.
  6. Cook the Cobbler: Cover the crock pot and cook on high for 2-3 hours or on low for 3-4 hours. The cobbler is done when a toothpick inserted into the cake topping comes out clean. Note that crock pot temperatures vary, so start checking for doneness earlier if your crock pot runs hot.

Notes

  • You can use white, yellow, or spice cake mix for slightly different flavor profiles.
  • Using salted butter is fine if you prefer a bit of salty contrast in the cobbler.
  • Check for doneness early if your crock pot cooks hotter or faster to avoid overcooking.
  • Serve warm for best texture and flavor; great with vanilla ice cream or whipped cream.
  • Fresh peaches work best, but thawed frozen peaches can be used in a pinch.
