Description

This Creamy Lime and Avocado Tart is a luscious, no-bake dessert featuring a naturally sweet and crunchy crust made from shredded coconut, pecans, and dates, paired with a smooth and tangy avocado-lime filling. Perfect as a refreshing treat, this tart combines tropical flavors and healthy fats in a vegan and gluten-free recipe that requires no baking and sets beautifully in the freezer.

Ingredients

Crust

  • 1/2 cup shredded unsweetened coconut
  • 1 cup chopped pecans
  • 1 cup medjool dates (about 12 dates)
  • 1-2 teaspoons lime zest
  • Pinch of sea salt

Filling

  • 4 avocados (about 1 1/2 cups of avocado puree)
  • 1/2 cup fresh squeezed lime juice
  • 1/2 cup coconut nectar, maple syrup, or agave
  • 2 tablespoons coconut oil
  • 2 teaspoons lime zest

Instructions

  1. Prepare the crust: Combine the shredded coconut, chopped pecans, medjool dates, 1-2 teaspoons of lime zest, and a pinch of sea salt in a food processor or mini chopper. Process until the dates form a sticky paste that binds the mixture together. Remove the mixture and press it evenly into the bottom of a springform pan. Place the pan in the freezer to firm up while you make the filling.
  2. Make the filling: In a high-speed blender or food processor, blend the avocado flesh, fresh lime juice, coconut nectar (or maple syrup/agave), coconut oil, and 2 teaspoons of lime zest until smooth and creamy. Ensure the mixture is well combined and has a pudding-like consistency.
  3. Assemble the tart: Pour the creamy avocado-lime filling over the chilled crust in the springform pan. Use a spoon to smooth and even out the surface for a neat finish.
  4. Set the tart: Place the assembled tart back into the freezer for at least 2 hours to allow it to fully set. For best results, freezing overnight is recommended.
  5. Serve: Remove the tart from the freezer, carefully release it from the springform pan, and let it sit at room temperature for 10-15 minutes before slicing. The filling will soften further the longer it sits, becoming more pudding-like but still delicious.
  6. Store leftovers: Any leftovers should be returned to the freezer to maintain firmness and freshness.

Notes

  • This tart is vegan, gluten-free, and dairy-free, making it suitable for a variety of dietary preferences.
  • Use ripe avocados for a smoother, creamier filling.
  • If you don’t have a springform pan, use any tart or pie dish, but chilling will be essential for easier slicing.
  • You can adjust the sweetness by varying the amount of coconut nectar or syrup.
  • Let the tart soften at room temperature before serving to enhance flavor and texture.
