Description

Ingredients

  1. 1 1/2 cups graham cracker crumbs
  2. 1/4 cup melted butter
  3. 2 tablespoons sugar
  4. 8 oz cream cheese, softened
  5. 1 cup plain Greek yogurt
  6. 1/2 cup granulated sugar
  7. 2 large eggs
  8. 1 teaspoon vanilla extract
  9. 1 tablespoon all-purpose flour
  10. 1/4 teaspoon salt

Instructions

Preheat the oven to 325°F (163°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.

  1. To make the crust, combine the graham cracker crumbs, melted butter, and sugar in a bowl. Mix until well combined.
  2. Press the graham cracker mixture evenly into the bottom of the prepared baking dish to form a crust layer. Bake for 8-10 minutes, until lightly golden, and then set aside to cool.
  3. For the filling, beat the softened cream cheese with an electric mixer until smooth and creamy.
  4. Add the Greek yogurt, sugar, eggs, vanilla extract, flour, and salt. Beat until fully combined and smooth.
  5. Pour the cheesecake filling over the cooled crust and spread it evenly.
  6. Bake for 35-40 minutes, or until the center is set and the edges are lightly browned. A toothpick inserted into the center should come out clean.
  7. Allow the bars to cool to room temperature before transferring to the refrigerator. Chill for at least 3 hours or overnight for best results.
  8. Once chilled, slice into squares and serve.
