Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons sugar
- 8 oz cream cheese, softened
- 1 cup plain Greek yogurt
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon all-purpose flour
- 1/4 teaspoon salt
Instructions
Preheat the oven to 325°F (163°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
- To make the crust, combine the graham cracker crumbs, melted butter, and sugar in a bowl. Mix until well combined.
- Press the graham cracker mixture evenly into the bottom of the prepared baking dish to form a crust layer. Bake for 8-10 minutes, until lightly golden, and then set aside to cool.
- For the filling, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add the Greek yogurt, sugar, eggs, vanilla extract, flour, and salt. Beat until fully combined and smooth.
- Pour the cheesecake filling over the cooled crust and spread it evenly.
- Bake for 35-40 minutes, or until the center is set and the edges are lightly browned. A toothpick inserted into the center should come out clean.
- Allow the bars to cool to room temperature before transferring to the refrigerator. Chill for at least 3 hours or overnight for best results.
- Once chilled, slice into squares and serve.
