Description

Cream Cheese Fat Bombs are low-carb, high-fat snacks that combine creamy cream cheese with coconut oil and butter. These customizable, bite-sized treats are perfect for keto, paleo, or low-carb diets.


Ingredients

  1. 8 oz cream cheese, softened
  2. 1/4 cup unsalted butter, softened
  3. 1/4 cup coconut oil, melted
  4. 23 tablespoons powdered erythritol or sweetener of choice (adjust to taste)
  5. 1 teaspoon vanilla extract (optional)
  6. A pinch of salt (optional)

Instructions

In a medium bowl, use an electric mixer or hand whisk to beat the softened cream cheese, butter, and melted coconut oil together until smooth and well combined.

  1. Add the powdered sweetener and vanilla extract (if using) to the mixture, and continue to mix until fully incorporated.
  2. Taste and adjust the sweetness to your preference, adding more sweetener if desired.
  3. If you like, add a pinch of salt to balance the sweetness and enhance the flavors.
  4. Spoon the mixture into silicone molds, ice cube trays, or mini muffin tins, smoothing the tops with a spoon or spatula.
  5. Place the molds in the fridge or freezer to set. Let them chill in the fridge for about 30 minutes or freeze for 1-2 hours until firm.
  6. Once set, pop the fat bombs out of the molds and store them in an airtight container in the fridge or freezer.

Notes

  1. You can adjust the sweetness to your taste with any low-carb sweetener like stevia, monk fruit, or erythritol.
  2. If you prefer a dairy-free version, substitute the cream cheese with a dairy-free alternative and use more coconut oil instead of butter.
