Description
Cream Cheese Fat Bombs are low-carb, high-fat snacks that combine creamy cream cheese with coconut oil and butter. These customizable, bite-sized treats are perfect for keto, paleo, or low-carb diets.
Ingredients
- 8 oz cream cheese, softened
 - 1/4 cup unsalted butter, softened
 - 1/4 cup coconut oil, melted
 - 2-3 tablespoons powdered erythritol or sweetener of choice (adjust to taste)
 - 1 teaspoon vanilla extract (optional)
 - A pinch of salt (optional)
 
Instructions
In a medium bowl, use an electric mixer or hand whisk to beat the softened cream cheese, butter, and melted coconut oil together until smooth and well combined.
- Add the powdered sweetener and vanilla extract (if using) to the mixture, and continue to mix until fully incorporated.
 - Taste and adjust the sweetness to your preference, adding more sweetener if desired.
 - If you like, add a pinch of salt to balance the sweetness and enhance the flavors.
 - Spoon the mixture into silicone molds, ice cube trays, or mini muffin tins, smoothing the tops with a spoon or spatula.
 - Place the molds in the fridge or freezer to set. Let them chill in the fridge for about 30 minutes or freeze for 1-2 hours until firm.
 - Once set, pop the fat bombs out of the molds and store them in an airtight container in the fridge or freezer.
 
Notes
- You can adjust the sweetness to your taste with any low-carb sweetener like stevia, monk fruit, or erythritol.
 - If you prefer a dairy-free version, substitute the cream cheese with a dairy-free alternative and use more coconut oil instead of butter.
 - For variations, try adding cocoa powder, peanut butter, or lemon zest for different flavors.
 - These fat bombs can be stored in the fridge for up to 1 week or frozen for up to 2 months.
