Description

Cranberry-Orange Oat Bars are a chewy, nutritious snack that combines the tang of cranberries and the citrusy zing of orange, all wrapped in a hearty oat base. Perfect for breakfast or a pick-me-up snack!


Ingredients

  1. 1 1/2 cups rolled oats
  2. 1/2 cup all-purpose flour (or whole wheat flour)
  3. 1/2 teaspoon baking powder
  4. 1/4 teaspoon salt
  5. 1/2 teaspoon ground cinnamon
  6. 1/4 cup brown sugar (or maple syrup)
  7. 1/4 cup coconut oil or unsalted butter, melted
  8. 1/4 cup orange juice (freshly squeezed)
  9. Zest of 1 orange
  10. 1 large egg
  11. 1 teaspoon vanilla extract
  12. 1/2 cup dried cranberries
  13. 1/4 cup chopped nuts (optional)

Instructions

Preheat your oven to 350°F (175°C) and grease or line an 8×8-inch baking dish with parchment paper.

  1. In a large bowl, combine the rolled oats, flour, baking powder, salt, cinnamon, and brown sugar. Stir to combine.
  2. In a separate bowl, whisk together the melted coconut oil (or butter), orange juice, orange zest, egg, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and stir to combine. Fold in the dried cranberries and chopped nuts (if using).
  4. Pour the batter into the prepared baking dish, spreading it evenly with a spatula. Bake for 25-30 minutes or until the bars are golden brown on top and a toothpick inserted into the center comes out clean.
  5. Let the bars cool in the baking dish for about 10 minutes, then transfer them to a wire rack to cool completely. Once cooled, cut into squares or rectangles and serve.

Notes

  • For a sweeter bar, increase the brown sugar or maple syrup by 1-2 tablespoons.
  • Substitute the dried cranberries with raisins or chopped fresh fruit for variations.
