Instructions
- Preheat Oven: Set your oven to 350°F (175°C) to get it ready for baking the skillet cookie.
- Mix Ingredients: In a bowl, combine the cottage cheese, maple syrup, vanilla extract, egg, tiny pinch of salt, oat flour, and baking soda. Stir until the mixture is well combined. Gently fold in the dark chocolate chips to evenly distribute them throughout the batter.
- Prepare Skillet: Lightly spray a 10-inch cast iron skillet with oil to prevent sticking. Pour the cookie batter into the skillet and spread it evenly to form a thin layer. Sprinkle additional chocolate chips on top for extra melty pockets of chocolate. Although the batter looks thin and lumpy, it will rise and smooth out during baking.
- Bake: Place the skillet in the preheated oven and bake for 20 to 30 minutes. Check doneness by inserting a toothpick into the center; it should come out clean. The cookie will be soft and cake-like, not hard or crunchy. Baking for about 25 minutes is ideal.
