Description

Cornbread is a golden, crumbly quick bread with a tender interior and lightly crisp crust. A Southern classic, it’s delicious served alongside chili, barbecue, soups, or simply with butter and honey.


Ingredients

  1. 1 cup yellow cornmeal
  2. 1 cup all-purpose flour
  3. 1/4 cup granulated sugar (optional)
  4. 1 tbsp baking powder
  5. 1/2 tsp baking soda
  6. 1/2 tsp salt
  7. 1 cup buttermilk
  8. 2 large eggs
  9. 1/2 cup unsalted butter, melted
  10. 2 tbsp honey (optional)

Instructions

Preheat oven to 400°F (200°C). Grease a cast-iron skillet, baking dish, or muffin tin.

  1. In a large mixing bowl, whisk together cornmeal, flour, sugar (if using), baking powder, baking soda, and salt.
  2. In a separate bowl, combine buttermilk, eggs, melted butter, and honey (if using).
  3. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  4. Pour batter into prepared pan and smooth the top.
  5. Bake 20–25 minutes, until golden brown and a toothpick inserted in the center comes out clean.
  6. Let cool slightly before slicing and serving.

Notes

  1. For a savory version, omit sugar and honey.
  2. A cast-iron skillet gives the best crispy crust.
  3. Add jalapeños, cheese, or corn kernels for variations.
  4. Don’t overmix the batter to avoid toughness.
  5. Cornbread can be frozen for up to 2 months.
