Description
- Cookie Swirl Cobbler is a delightful twist on traditional cobbler, combining juicy fruit with a biscuit-like topping and chunks of cookie dough swirled throughout. The result is a comforting and indulgent dessert that’s sure to impress.
Ingredients
- For the fruit filling:
- 4 cups fresh fruit (such as peaches, berries, or a mix)
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1 tablespoon cornstarch (for thickening)
- For the cobbler:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 1 cup cookie dough (store-bought or homemade, chopped into small chunks)
Instructions
Preheat the oven to 350°F (175°C) and grease or line an 8×8-inch baking dish with parchment paper.
- In a medium bowl, toss the fruit with sugar, lemon juice, cinnamon, and cornstarch. Transfer the fruit mixture into the prepared baking dish and spread evenly.
- In a separate bowl, combine the flour, sugar, baking powder, and salt for the cobbler topping. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Stir in the milk and vanilla extract until just combined. The batter should be thick but slightly lumpy.
- Drop spoonfuls of the batter over the fruit filling, leaving some gaps for the fruit to peek through.
- Add chunks of cookie dough in between the batter spoonfuls, gently swirling them into the top of the cobbler.
- Bake for 35-40 minutes, or until the cobbler is golden brown on top, the fruit is bubbling, and a toothpick inserted into the cobbler portion comes out clean.
- Let the cobbler cool for 10 minutes before serving.
Notes
- Use any fruit combination you like such as peaches, blueberries, blackberries, or strawberries.
- Add a pinch of nutmeg or ginger for extra warmth in the fruit filling or batter.
- For a chocolatey twist, use chocolate chip cookie dough instead of regular dough.
- Add chopped nuts like pecans or walnuts to the fruit filling or batter for extra texture.
- If using frozen fruit, make sure to thaw and drain the fruit to prevent a soggy cobbler.
- If making ahead, assemble the cobbler and refrigerate. Add 10-15 extra minutes to the baking time if chilled.
