Description

Cookie Monster cinnamon rolls are a playful twist on the classic cinnamon roll, stuffed with gooey chocolate chip cookie dough and topped with vibrant blue frosting, crushed cookies, and candy eyes. Perfect for kids’ parties, brunch, or a whimsical weekend treat.


Ingredients

  1. 1 can refrigerated cinnamon roll dough (810 rolls)
  2. 1/4 cup brown sugar
  3. 1 tsp ground cinnamon
  4. 1/2 cup mini chocolate chips
  5. 1/2 cup prepared chocolate chip cookie dough (homemade or store-bought)
  6. 4 oz cream cheese, softened
  7. 2 tbsp butter, softened
  8. 1 cup powdered sugar
  9. 1/2 tsp vanilla extract
  10. Blue gel food coloring
  11. 1/2 cup crushed chocolate chip cookies (for topping)
  12. Optional: edible candy eyes for decoration

Instructions

Preheat oven to 350°F (175°C) and grease a baking dish or line with parchment paper.

  1. Unroll each cinnamon roll and gently flatten.
  2. Spread a thin layer of cookie dough over each strip, sprinkle with brown sugar, cinnamon, and some mini chocolate chips.
  3. Roll each strip back up and place them in the baking dish, spaced slightly apart.
  4. Bake for 20–25 minutes, or until golden brown and cooked through.
  5. Meanwhile, prepare the frosting: beat cream cheese, butter, powdered sugar, and vanilla until smooth. Add blue food coloring and mix until fully combined.
  6. Let rolls cool slightly, then frost generously with blue frosting.
  7. Top with crushed cookies, remaining mini chocolate chips, and candy eyes if using.
  8. Serve warm for the best texture and flavor.

Notes

  1. Don’t overfill rolls with cookie dough to prevent leaking.
  2. Use gel food coloring for vibrant frosting without thinning it.
  3. Store-bought or homemade cookie dough both work well.
  4. Assemble the night before and bake fresh in the morning for easy prep.
