Description

Delightfully sweet and crunchy, these Cookie Butter Rice Crispy Treats combine the classic marshmallow-rice cereal base with creamy cookie butter for an irresistible twist. Perfect for an easy no-bake dessert or snack, they come together quickly with simple ingredients to satisfy your sweet tooth.

Ingredients

Ingredients

  • 6 tablespoons unsalted butter
  • 1 bag mini marshmallows (about 10 ounces)
  • 1/2 cup cookie butter
  • 5 1/2 cups rice cereal

Instructions

  1. Prepare the pan: Grease a 9 x 13 inch baking pan thoroughly to prevent sticking of the treats.
  2. Melt the butter: Add the 6 tablespoons of unsalted butter to a large pan and heat on low, allowing it to melt gently without browning.
  3. Add marshmallows: Slowly add the mini marshmallows to the melted butter on low heat. Stir continuously to prevent the mixture from burning and ensure a smooth, even melt.
  4. Combine cookie butter: Stir in the 1/2 cup of cookie butter into the melted marshmallow and butter mixture. Continue stirring on low heat until fully blended and smooth.
  5. Incorporate rice cereal: Remove the pan from heat and gradually add the 5 1/2 cups of rice cereal to the marshmallow mixture. Mix thoroughly to coat all cereal pieces evenly.
  6. Press into pan: Pour the mixture into the greased 9 x 13 pan. Use a spatula to spread it evenly and gently press the mixture down to compact it slightly.
  7. Cool and set: Allow the treats to cool at room temperature for about one hour. This helps them set properly for easy cutting.
  8. Serve: Once set, cut into squares and serve as a delightful snack or dessert.

Notes

  • Stir continuously while melting marshmallows to prevent burning.
  • Press the mixture gently into the pan to keep treats light and crispy.
  • Let the treats cool completely before cutting for clean squares.
  • You can substitute cookie butter with peanut butter for a different flavor twist.
  • Store treats in an airtight container to maintain freshness for up to 3 days.
