Description

Cola Chocolate Cherry Cake is a rich, moist dessert that blends chocolate, cola soda, and cherry pie filling into a nostalgic and crowd-pleasing treat. Topped with a luscious chocolate glaze, it’s easy to make and full of flavor.

Ingredients

  1. For the Cake:
  2. 2 cups all-purpose flour
  3. 1 3/4 cups granulated sugar
  4. 1/2 cup unsweetened cocoa powder
  5. 1 tsp baking soda
  6. 1/2 tsp salt
  7. 1 cup cola soda (not diet)
  8. 3/4 cup vegetable oil
  9. 2 large eggs
  10. 1 tsp vanilla extract
  11. 1 (21 oz) can cherry pie filling
  12. For the Glaze (optional):
  13. 1/2 cup unsalted butter
  14. 1/4 cup cola soda
  15. 1/4 cup unsweetened cocoa powder
  16. 2 cups powdered sugar
  17. 1 tsp vanilla extract

Instructions

Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.

  1. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  2. Add cola, oil, eggs, and vanilla extract. Mix until smooth and combined.
  3. Gently fold in the cherry pie filling.
  4. Pour the batter into the prepared pan and spread evenly.
  5. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  6. While the cake is cooling slightly, prepare the glaze: In a saucepan over medium heat, melt the butter with cola and cocoa powder.
  7. Remove from heat and whisk in powdered sugar and vanilla until smooth.
  8. Pour the warm glaze evenly over the cake. Let cool before slicing and serving.

Notes

  1. Use cherry cola or Dr Pepper for added flavor depth.
  2. Top with whipped cream instead of glaze for a lighter finish.
  3. Add mini chocolate chips or chopped nuts for texture.
  4. This cake stays moist for days—great for making ahead.
  5. Serve at room temperature for the best flavor and texture.
