These Coffee Cinnamon Rolls combine the comforting flavors of cinnamon and coffee in a soft, fluffy dough rolled with a sweet, spiced filling and topped with a rich coffee-infused icing. Ingredients
Dough
- 57 g unsalted butter (¼ cup / 2 oz)
- 1 cup cold milk (250 ml)
- 455 g plain flour (all-purpose flour) (3 ½ cups / 1 lb)
- 2 ¼ teaspoons instant dry yeast (1 sachet / 7 g)
- ⅓ cup white granulated sugar (66 g / ~2¼ oz)
- ½ teaspoon salt
- 1 large egg
Filling
- ½ cup packed brown sugar (100 g / 3 ½ oz)
- 3 teaspoons cinnamon
- 2 teaspoons instant coffee powder
- ½ cup pecans, roughly chopped (60 g / ~2 oz)
- 57 g unsalted butter, melted (¼ cup / 2 oz)
Topping
- 1 egg yolk
- 1 teaspoon water
- 2 teaspoons maple syrup
- Remaining pecans (reserved couple tablespoons from filling)
Icing
- ¼ cup thickened cream (heavy cream) (60 ml)
- 6 teaspoons finely ground instant coffee
- 2 ½ cups icing sugar (powdered sugar) (325 g / ~11 ½ oz)
Instructions
- Making the Dough: In a small saucepan over low heat, melt together the butter and roughly one third of the milk. Stir or swirl gently to melt without overheating. Add the remaining cold milk and set aside.
- Mix Dry Ingredients: In the bowl of a stand mixer, add the flour, yeast, sugar, and salt, mixing them together well to combine.
- Add Wet Ingredients: Pour in the warm milk and butter mixture, give it a quick stir, then add the egg.
- Knead the Dough: Attach the dough hook to the stand mixer and mix the dough for 6-7 minutes until it becomes smooth and elastic in texture.
- First Rise: Lightly oil a clean bowl, place the dough inside, and turn it over to coat with oil. Cover with plastic wrap and leave it in a warm place for 1 hour or until doubled in size.
- Roll Out Dough: On a lightly floured surface, roll the dough into a large rectangle approximately 5-6 mm thick.
- Preheat Oven & Prepare Tray: Preheat the oven to 200°C (180°C fan forced) or 375°F and grease a 9×13 inch baking tray.
- Prepare Filling: In a small bowl, combine brown sugar, cinnamon, 2 teaspoons instant coffee powder, and most of the pecans (reserve a couple of tablespoons for topping).
- Assemble Rolls: Brush the melted butter evenly over the dough, then scatter the filling mixture over the top.
- Shape Rolls: Roll the dough from one long side to the other into a tight log. Cut the log into 12 even pieces.
- Second Rise: Place the rolls cut side up on the prepared baking tray, spaced evenly. Let them rest and rise for an additional 15 minutes.
- Prepare Egg Wash & Topping: Beat the egg yolk with water and brush this over the exposed dough of the rolls. Mix the remaining pecans with maple syrup and dot over the tops of the rolls.
- Bake: Bake the cinnamon rolls for 22-25 minutes, turning the tray halfway through baking, until they are deep golden brown. Allow them to cool before icing.
- Make Icing: In a microwave-safe bowl, heat the cream and instant coffee for 20-30 seconds until warm. Stir until the coffee dissolves.
- Finish Icing: Sift in the icing sugar and stir well. Adjust consistency as desired by adding more sugar to thicken or more cream to thin, then spoon or pipe the icing over the cooled cinnamon rolls.
