Description

Delicious and nutritious Coconut Protein Buckeyes combine the rich flavors of coconut and chocolate into bite-sized snacks perfect for a quick energy boost or a healthy dessert. These no-bake treats blend coconut flour, coconut flakes, maple syrup, and protein powder, coated in smooth melted chocolate and topped with a sprinkle of sea salt for a balanced sweet and salty flavor.

Ingredients

Base Ingredients

  • 1/4 cup coconut flour
  • 4 scoops protein powder
  • 1 cup coconut flakes
  • 1/4 cup maple syrup
  • 2 tbsp coconut oil

Chocolate Coating

  • 1 cup chocolate chips
  • Coarse sea salt, to sprinkle

Instructions

  1. Combine Ingredients: Place coconut flour, protein powder, coconut flakes, maple syrup, and coconut oil in a large bowl. Fold carefully to combine all ingredients into a sticky dough.
  2. Form Balls: Shape the mixture into bite-sized balls and place them on a plate or tray. Refrigerate for 10 minutes to firm up before coating.
  3. Melt Chocolate: While the balls chill, melt the chocolate chips in a microwave-safe bowl or over a double boiler until smooth.
  4. Dip Buckeyes: Using two forks, dip each coconut ball into the melted chocolate, covering most of the surface. Transfer the dipped buckeyes between forks to allow excess chocolate to drip off and place them on a parchment-lined plate or cookie sheet.
  5. Finish and Chill: Sprinkle the freshly dipped buckeyes with coarse sea salt, then refrigerate until the chocolate is set, about 15 minutes.

Notes

  • For a vegan version, use dairy-free protein powder and chocolate chips.
  • Store buckeyes in an airtight container in the refrigerator to keep them firm and fresh.
  • Use unsweetened coconut flakes for lower sugar content.
  • Adjust protein powder flavor to complement the chocolate, such as vanilla or unflavored.
  • These treats are best consumed chilled but can be left at room temperature for short periods before serving.
