  • ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Salt

  • 80 g Desiccated Coconut (plus extra for decorating)
  • 125 g Pecans, chopped


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (180°C) ensuring it reaches the right temperature for even baking.
  2. Cream Butter and Sugars: In a mixing bowl, cream together the unsalted butter, granulated sugar, and light brown sugar until just combined and slightly fluffy, avoiding overbeating to maintain texture.
  3. Add Eggs and Vanilla: Beat in the eggs and vanilla extract thoroughly to incorporate moisture and flavor.
  4. Mix Dry Ingredients: In a separate bowl, combine all-purpose flour, baking powder, baking soda, and salt, then gradually mix into the wet ingredients until a uniform dough forms.
