Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup coconut milk
- 1/2 cup sweetened shredded coconut
- 1 tbsp lime zest
- 2 tbsp fresh lime juice
- 1 tsp vanilla extract
- Frosting:
- 1/2 cup unsalted butter, softened
- 2 1/2 cups powdered sugar
- 2 tbsp lime juice
- 1 tsp lime zest
- 1/4 tsp coconut extract (optional)
- Shredded coconut, for garnish (optional)
Instructions
Preheat oven to 350°F (175°C). Line a cupcake pan with paper liners.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large mixing bowl, cream the butter and sugar together until light and fluffy.
- Beat in the eggs one at a time, then mix in lime zest, lime juice, and vanilla extract.
- Alternately add the dry ingredients and coconut milk to the butter mixture, mixing until just combined.
- Fold in shredded coconut.
- Divide batter evenly among cupcake liners, filling each about 2/3 full.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- To make the frosting: Beat softened butter until creamy. Gradually add powdered sugar and mix until smooth.
- Stir in lime juice, lime zest, and coconut extract if using.
- Frost cooled cupcakes using a piping bag or spatula.
- Garnish with shredded coconut and additional lime zest, if desired.
