Description

Coconut Lime Bars are a tropical twist on classic lemon bars, featuring a tangy lime filling and a buttery coconut crust, topped with toasted coconut for a refreshing and indulgent treat.


Ingredients

  1. For the coconut crust:
    1 1/4 cups all-purpose flour
    1/2 cup shredded coconut (sweetened or unsweetened)
    1/4 cup granulated sugar
    1/4 teaspoon salt
    1/2 cup unsalted butter, cold and cubed
    For the lime filling:
    3 large eggs
    1 cup granulated sugar
    1 tablespoon lime zest (about 2 limes)
    1/2 cup freshly squeezed lime juice (about 4 limes)
    1/4 cup all-purpose flour
    1/4 teaspoon salt
    1/2 cup sweetened shredded coconut (for topping)

Instructions

For the Coconut Crust:
Preheat oven to 350°F (175°C). Grease an 8×8-inch square baking dish or line with parchment paper. In a bowl, combine flour, shredded coconut, sugar, and salt. Add cold butter and use a pastry cutter to work the butter into the dry ingredients until it resembles coarse crumbs. Press the mixture into the bottom of the prepared dish and bake for 15-18 minutes, until golden. Let cool.

  1. For the Lime Filling:
    In a medium bowl, whisk together eggs, sugar, lime zest, lime juice, flour, and salt until smooth. Pour over the warm crust and bake for 18-20 minutes, or until the filling is set. Sprinkle with shredded coconut and bake for an additional 5 minutes, until coconut is toasted.
  2. Cool and Serve:
    Allow the bars to cool at room temperature, then refrigerate for at least 2 hours. Cut into squares and garnish with extra lime zest or coconut before serving.

Notes

  • For a stronger coconut flavor, add coconut extract to the lime filling or increase shredded coconut in the crust.
  • Use a gluten-free flour blend for a gluten-free version of these bars.
  • For a lemon-lime combination, replace half of the lime juice with lemon juice.
