Ingredients

Streusel Topping

  • 1 cup (125g) all-purpose flour
  • 1 cup (180g) brown sugar, packed
  • 1 teaspoon ground cinnamon
  • Pinch kosher salt
  • 1/2 cup (113g) unsalted butter, softened

Cinnamon Layer

  • 1/4 cup (50g) sugar
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon ground cinnamon

Cake Batter

  • 3 cups (375g) all-purpose flour
  • 2 1/4 cups (450g) sugar
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (230g) sour cream
  • 1/4 cup whole milk
  • 4 large eggs
  • 1 tablespoon vanilla extract


Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Butter or spray a 9×13-inch baking pan to prevent sticking.
  2. Make the Streusel Topping: In a small bowl, mix the flour, brown sugar, cinnamon, and a pinch of kosher salt. Use a fork to mash the softened butter into the dry ingredients until the mixture is crumbly and well combined. Set aside.
  3. Mix the Cinnamon Layer: In another small bowl, combine the sugar, flour, and cinnamon for the cinnamon layer. Set aside.
  4. Combine Dry Ingredients for Batter: In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, sugar, baking powder, baking soda, and kosher salt. Stir on low speed to blend.
  5. Add Butter to Dry Ingredients: Add the softened butter to the dry mixture. Beat on medium-low speed for 2 to 3 minutes until the mixture resembles moist sand and the butter is fully incorporated.
  6. Mix Wet Ingredients: In a medium bowl, whisk together the sour cream, whole milk, eggs, and vanilla extract until smooth and combined.

  8. Assemble the Cake: Spread half of the batter evenly in the prepared pan. Evenly sprinkle the cinnamon-sugar layer over the batter. Carefully spread the remaining batter over the cinnamon layer. This may require patience as the batter tends to lift the cinnamon layer. Finally, sprinkle the streusel topping evenly over the top of the cake.
  9. Bake the Cake: Bake in the preheated oven for 40 to 50 minutes. Begin checking for doneness at about 40 minutes by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  10. Cool and Store: Allow the cake to cool in the pan. You can make the cake a day or two ahead; once cooled, remove it from the pan, cover tightly with plastic wrap, and store at room temperature. For longer storage, wrap the cake in plastic wrap and then foil before freezing.
