Ingredients
Dry Ingredients for Pancakes
- 1 cup all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 cup Cinnamon Toast Crunch cereal, crushed
Wet Ingredients for Pancakes
- 1 1/4 cups buttermilk
- 3 tbsp butter, melted
- 1 large egg
- 1 tsp vanilla extract
Glaze Ingredients
- scant 1/4 cup maple syrup
- 1 cup powdered sugar
- 1 1/2 tbsp milk
- 1/4 tsp vanilla extract (optional)
Instructions
- Mix Dry Ingredients: In a mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until evenly combined.
- Add Cereal: Stir in the crushed Cinnamon Toast Crunch cereal into the dry mixture and set aside.
- Combine Wet Ingredients: In a large mixing bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract until fully combined.
- Mix Batter: Gradually add the dry mixture into the wet ingredients, stirring gently after each addition until just combined. Be careful not to over-mix to keep the pancakes fluffy.
- Cook Pancakes: Heat a skillet over medium-high heat. Once hot, pour about 1/4 cup of batter onto the skillet. Cook for about 2 minutes until bubbles form and the edges look set, then flip and cook the other side for 1-2 minutes until golden brown and puffed.
- Repeat Cooking: Remove the cooked pancake to a plate and repeat the process with the remaining batter.
- Prepare the Glaze: In a small bowl, whisk together the maple syrup, powdered sugar, milk, and vanilla extract (if using) until smooth and pourable.
- Serve: Stack several pancakes and drizzle the glaze on top just before serving for a sweet and flavorful finish.
Notes
- Do not over-mix the pancake batter to keep pancakes light and fluffy.
- Use medium-high heat to ensure the pancakes cook evenly without burning.
- The cinnamon glaze adds extra sweetness and cinnamon flavor complementing the cereal in the pancakes.
- You can substitute regular milk for buttermilk, but expect a slight difference in texture.
- For a crunchier texture, lightly toast the crushed cereal before adding to the batter.
