Description

These Cinnamon Toast Crunch Pancakes are a delightful twist on classic pancakes, incorporating crushed Cinnamon Toast Crunch cereal for added texture and flavor. Topped with a sweet cinnamon glaze, they make a perfect breakfast treat that’s both fun and delicious.

Ingredients

Dry Ingredients for Pancakes

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup Cinnamon Toast Crunch cereal, crushed

Wet Ingredients for Pancakes

  • 1 1/4 cups buttermilk
  • 3 tbsp butter, melted
  • 1 large egg
  • 1 tsp vanilla extract

Glaze Ingredients

  • scant 1/4 cup maple syrup
  • 1 cup powdered sugar
  • 1 1/2 tbsp milk
  • 1/4 tsp vanilla extract (optional)

Instructions

  1. Mix Dry Ingredients: In a mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until evenly combined.
  2. Add Cereal: Stir in the crushed Cinnamon Toast Crunch cereal into the dry mixture and set aside.
  3. Combine Wet Ingredients: In a large mixing bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract until fully combined.
  4. Mix Batter: Gradually add the dry mixture into the wet ingredients, stirring gently after each addition until just combined. Be careful not to over-mix to keep the pancakes fluffy.
  5. Cook Pancakes: Heat a skillet over medium-high heat. Once hot, pour about 1/4 cup of batter onto the skillet. Cook for about 2 minutes until bubbles form and the edges look set, then flip and cook the other side for 1-2 minutes until golden brown and puffed.
  6. Repeat Cooking: Remove the cooked pancake to a plate and repeat the process with the remaining batter.
  7. Prepare the Glaze: In a small bowl, whisk together the maple syrup, powdered sugar, milk, and vanilla extract (if using) until smooth and pourable.
  8. Serve: Stack several pancakes and drizzle the glaze on top just before serving for a sweet and flavorful finish.

Notes

  • Do not over-mix the pancake batter to keep pancakes light and fluffy.
  • Use medium-high heat to ensure the pancakes cook evenly without burning.
  • The cinnamon glaze adds extra sweetness and cinnamon flavor complementing the cereal in the pancakes.
  • You can substitute regular milk for buttermilk, but expect a slight difference in texture.
  • For a crunchier texture, lightly toast the crushed cereal before adding to the batter.
