Instructions
- Preheat and prep pan: Preheat your oven to 425°F (220°C) and prepare a 12-count muffin tin by greasing with oil or butter, or lining it with muffin liners to prevent sticking.
- Make muffin batter: Using an electric mixer, cream together the 1/2 cup softened butter with 1 cup of brown sugar on medium-high until smooth and creamy. Add the eggs, vanilla extract, and whole milk, mixing until fully combined. Reduce the mixer speed to low, then gradually add the dry ingredients—3 cups all-purpose flour, 1 tablespoon ground cinnamon, 1 teaspoon baking powder, and 1 teaspoon baking soda—mixing just until combined to avoid overmixing.
- Make streusel topping: In a small bowl, combine 2 tablespoons softened butter with 1 cup brown sugar and 1 tablespoon ground cinnamon. If you want a crumbly streusel, add the optional 1 tablespoon flour and a pinch of baking powder, then mix until crumbly.
- Fill muffin tin: Spoon the batter evenly into the prepared muffin cups, filling each about three-quarters full. Sprinkle an even layer of the streusel topping over each muffin, distributing all the topping evenly.
