Easy to make and fully customizable, it’s perfect for parties, family gatherings, or a light summer treat.
Ingredients
- For the Cinnamon Chips:
6 small flour tortillas (or gluten-free tortillas)
1/4 cup coconut oil or melted butter
1/4 cup granulated sugar
1 tablespoon ground cinnamon
For the Berry Topping:
1 1/2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
2 tablespoons honey or maple syrup (optional)
1/2 teaspoon vanilla extract
1 tablespoon fresh lemon juice
For the Creamy Drizzle:
1/2 cup coconut cream (or whipped cream for non-vegan version)
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
Instructions
For the Cinnamon Chips: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Prepare the Tortillas: Stack the tortillas and cut them into 8 wedges. Coat each tortilla wedge lightly with melted coconut oil (or butter) on both sides. Sprinkle with cinnamon-sugar mixture on both sides.
- Bake the Chips: Arrange the tortilla wedges in a single layer on the prepared baking sheet and bake for 8-10 minutes until golden and crisp. Let cool completely.
- For the Berry Topping: In a bowl, combine mixed berries with honey/maple syrup, vanilla extract, and lemon juice. Gently toss the berries.
- For the Creamy Drizzle: Whisk together coconut cream (or whipped cream), powdered sugar, and vanilla extract until smooth and creamy.
- Assemble the Dessert: Once the cinnamon chips have cooled, arrange them on a serving platter, spoon berry mixture on top, and drizzle with creamy drizzle. Serve immediately.
Notes
- For a vegan-friendly option, use coconut cream and plant-based sweeteners like maple syrup or agave.
- For extra crunch, top the nachos with chopped nuts like almonds, walnuts, or pecans.
- If you prefer a less sweet version, reduce sugar in the cinnamon chips or omit syrup from the berry topping.
- If using frozen berries, thaw and drain the liquid before using to avoid sogginess.
