Description
This Chocolate Vanilla Marble Cake combines rich cocoa and smooth vanilla flavors in a beautifully swirled loaf. Perfectly moist and tender, it makes for an elegant dessert or a delightful snack alongside coffee or tea.

Dry Ingredients
- 2 cups (235g) all purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp kosher salt
- 3 tbsp (22g) unsweetened cocoa powder
Wet Ingredients
- 2/3 cup (150g) unsalted butter, at room temperature
- 1 cup (200g) sugar
- 165g eggs (about 3 eggs, whisked and weighed)*
- ¼ cup (60g) milk (2% m.f or whole)
- 2 tsp (8.5ml) vanilla extract
- 1 tbsp (15ml) milk for cocoa batter
Notes
- *Whisk the eggs together in a small bowl and weigh them. Adjust the quantity to have exactly 165g by removing some if necessary.
Instructions
- Preheat and Prepare Pan: Preheat your oven to 390°F (200°C). Grease a 9×5-inch loaf pan with butter and dust it lightly with flour to prevent sticking.
- Cream Butter and Sugar: Using a spatula or whisk, cream together the unsalted butter and sugar until the mixture becomes light and fluffy. Then add in the eggs and mix until everything is well combined.
- Mix Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and kosher salt. Gradually combine the dry mixture with the wet mixture, stirring just until incorporated. Then add the 60g milk and mix again just to combine.
- Separate and Flavor Batters: Divide the batter evenly into two separate bowls. Stir the vanilla extract into one bowl for the vanilla batter. In the other, mix the cocoa powder with 1 tablespoon of milk, and stir this into the second bowl to make the chocolate batter.
- Layer the Batter: Using a large spoon, spoon about 1/3 cup of vanilla batter into the prepared loaf pan, spreading it evenly along the bottom. Follow by adding the same amount of chocolate batter in the center, spreading it out to create visible edges of vanilla batter around it.
- Create Layers and Marble Effect: Continue layering alternately with vanilla and chocolate batters, always pushing down slightly in the center and leaving edges visible to achieve a marbled look. When all batter is used, run a sharp knife in an “S” pattern vertically through the batter to create the marble effect.
- Bake the Cake: Place the loaf pan in the oven and bake at 390°F (200°C) for 10 minutes. Then reduce the oven temperature to 350°F (180°C) and continue baking for an additional 40 minutes. Test doneness by inserting a cake tester or toothpick; it should come out clean.
- Cool and Serve: Remove the cake from the oven and transfer it to a cooling rack. Allow it to cool for at least 15 minutes before removing it from the loaf pan and slicing to serve.

- For best results, ensure butter is softened to room temperature before creaming.
- Do not overmix the batter once flour is added to keep the cake tender.
- The marbling effect is improved by gently pushing batter in the middle and leaving edges visible during layering.
