Description

A light and tender chocolate sponge cake rolled with a creamy whipped cream or buttercream filling, finished with powdered sugar or ganache. A classic dessert that’s elegant, rich, and surprisingly easy to make.


Ingredients

    1. For the chocolate sponge cake:
    2. 95g all-purpose flour (3/4 cup)
    3. 30g unsweetened cocoa powder (1/3 cup)
    4. 1 tsp baking powder
    5. 1/4 tsp salt
    6. 4 large eggs
    7. 150g granulated sugar (3/4 cup)
    8. 60ml vegetable oil or melted butter (1/4 cup)
    9. 60ml milk (1/4 cup)
    10. 1 tsp vanilla extract

 

    1. For the filling:
    2. 240ml heavy whipping cream (1 cup) or 115g butter (1/2 cup), softened
    3. 60g powdered sugar (1/2 cup)
    4. 1 tsp vanilla extract
    5. Optional: 2 tbsp cocoa powder or 60g chocolate chips, melted, for chocolate variation

 

  1. Optional toppings:
  2. Chocolate ganache
  3. Powdered sugar
  4. Shaved chocolate or cocoa powder

Instructions

Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease.

  1. In a bowl, sift together flour, cocoa powder, baking powder, and salt.
  2. In a large mixing bowl, beat eggs and sugar until thick, pale, and fluffy (about 5 minutes).
  3. Add oil, milk, and vanilla to the egg mixture and mix until just combined.
  4. Gently fold dry ingredients into wet until smooth and combined.
  5. Spread batter evenly into prepared pan and bake 10–12 minutes, or until cake springs back when lightly pressed.
  6. Invert warm cake onto a kitchen towel dusted with powdered sugar. Peel off parchment.
  7. Roll cake up in towel from short end while warm. Let cool completely.
  8. Whip cream with powdered sugar and vanilla until stiff peaks form, or beat butter, powdered sugar, and vanilla until light and fluffy for buttercream.
  9. Unroll cooled cake, spread filling evenly, then re-roll tightly.
  10. Chill at least 1 hour before serving. Dust with powdered sugar or cover with ganache if desired.

Notes

  1. Roll cake while warm to prevent cracking.
  2. Buttercream filling holds up better for make-ahead options.
  3. Add a layer of jam or ganache for flavor variation.
  4. Espresso powder enhances chocolate flavor for a mocha twist.
  5. Use a mascarpone-based filling for a tiramisu-inspired version.
